BIG Freezer Menu Plan!

Freezer Meals 7/18/2020

Yesterday,  “The Artist” and I put up 18 dinner meals in the freezer.

Here we have the Mexican Pork Chops . . .

Putting Up Freezer Meals During Covid-19

Recently, “The Artist and I put up a bunch of new meals for the freezer. During Covid-19, it’s a little more difficult because stores are limiting how much of each kind of meat we can buy. So what I’ve been doing is creating a menu which doesn’t call for too much of one meat, but varying it up so as to be able to get what I need. Here’s the menu for this time around.

We put up 2 of each of these meals, plus two extra Honey Dijon Chicken meals. The Salmon meal I just froze separately so that it could be made with fresh dill the day we decide to have it.

Freezer Meal Prepping Our Way Through Covid 19

On April 11 2020 “The Artist and I put up 12 supper meals in the freezer!

On that day we did recipes 1 – 6 in exactly 1 hour, 36 minutes and  3.29 seconds. Yes. I DID use the stopwatch function on my phone! Recipe #7 had to wait until after Easter Sunday dinner, because I needed the leftover ham for it. 

This is some of the prep work for some of the recipes:

By the end of that 1 hour, 36 minutes and  3.29 seconds, we had THIS!

On Sunday afternoon, my husband cut up 8 cups of ham, and “The Artist” cut up the onions, carrots and celery. With the 4 LBS of split peas I bought, we now have 2 packages in the freezer of the makings for Split Pea Soup, for a total of 14 meals ready to thaw and cook.Not reheat, cook from scratch.

Freezer Prepping Right Before Stay at Home Order

So you all know that about once a month we do a menu plan for the freezer to save money and make things easier, right? Well, we managed to get one in right befor our governor gave a stay at home order. I will say that it took several days to get the meat we needed, and then “The Batman” and I went to Smith’s for the “reserved for seniors and disabled” hour to attempt to get the other ingredients for the recipes. We waited in line outside of the store for 45 minutes. I ended up needing to substitue a lot of ingredients, but I did get 16 meals into the freezer. I hope the substitutions work!

I finally thought of going to our local meat marked (duh!), and they were limiting to 5 pounds of each thing you wanted to buy. This is my purchase:

I’ve never bought a bag of bacon before! Here are the meals, right before going into the fridge!

So far, we’ve had one of the Sloppy Dog meals, one of the Dr. Pepper Pulled Pork, and one meal left over from a previous session, Ginger Peach Pork Chops! I do 8 servings, and almost always get two suppers out of them for my family.

I’m glad we were able to get this done before the stay at home order, and that we were able to find what we needed in the midst of all the panicked shoppers.

Prepping and Freezing Again!

Friday, we shopped. Saturday, we put together two each of these recipes for the freezer!

We also had enough bones with extra meat and skin from the rotisserie chickens to make chicken stock, which is going right now in my 6 quart slow cooker!

What We Prepped and Froze Yesterday!

And last night after all this work, we cooked and ate for supper one of the Burrito Pie meals!

We use my membership to My Freeze Easy to create our menus, and it has been the best money I’ve ever spent, when it comes to our food budget! We have so much more variety, and with shopping and prepping a couple times a month, we have freash meals in the freezer, just waiting to thaw and cook.  My crew really likes it, and there have only been a few things they didn’t care for. They help me decide which recipes to put into our menu, now!

Yummy Freezer Meals!

Today, “The Artist” and I put together 11 meals for the freezer!

“The Artist” is making the Baked Apricot Meatballs, while I make the sauce to put on them.

Here, we have the really good smelling topping to add into the Baked Cinnamon-Apple Pork Chops. I wish you could smell this, instead of just seeing it, because it just smells so yummy, and I’m sure it’s going to smell even better baking in the oven!

This is all 10 of the meals from the recipes above, 2 of each, plus a package made using the extra pork chops and Vidalia Vinaigrette, so a total of 11 meals.

And finally, 11 new supper main dishes in the freezer to add to whatever meals were left from the last time we did this!

We have a membership with My Freeze Easy, and every few weeks I just go in and create my own menu plan, but you don’t have to. Each monty there are 12 new menus to choose from. Each recipe will make 2 meals for the freezer, and we chose to use 5 recipes this time. I also set my meal portions per meal at 8 so there will be leftovers, often enough for a second supper the next day! We have been using and loving this for almost 3 years now, and my crew loves it! We get so much more variety now, and I never have to worry about having something already prepped to just thaw and bake, slow cook, Instant Pot, or skillet! Another reason I started doing this is that I’m part of the “Care Bear” ministry in our church (Mesa Baptist Church). I never have to say no anymore, because there are always good meals in my freezer, which enables me to do a meal for someone in need wil very little notice. I like that!
